Easter Cake !
Here’s an Easter inspired cake, a three tier, chocolate cake filled with chocolate mousse and decorated in fondant. I actually really enjoyed making this fun and easy design.
I guess it would be a great decoration for a carrot cake with cream cheese frosting…
Here’s my “go to” chocolate cake recipe – very easy and very moist :
Ingredients :
2 cups sugar
1 3/4 cups all-purpose flour
3/4 cups Hershey’s cocoa
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
Heat oven to 350* Fahrenheit. Grease and flour two 9-inch round baking pans.
Combine dry ingredients into large bowl. Add eggs, milk, oil and vanilla. Beat on medium speed for 2 minutes. Stir in boiling water. (Batter will be thin.) Pour into pans.
Bake 30-35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely.
The filling consisted of whipped cream with melted chocolate.

We were the hoppy recipients of Natacha’s creative, tasty cake. Forget carrots. . . if I were that bunny, I’d dig to China for the moist, rich chocolate cake with heavenly filling! Although having to break through the flawlessly decorated icing would make me pause. . . for about a minute!!
